Mushtaq Ahmed Khan, famously known as “Shaitaan Waza,” is a name synonymous with excellence in the preparation of Kashmiri Wazwan. Hailing from the Fateh Kadal area of Srinagar, Mushtaq’s journey from a postgraduate business administration student in Delhi to a global ambassador for Kashmiri cuisine is a testament to his dedication and vision.

A Legacy of Culinary Brilliance
The title “Shaitaan Waza” stems from a family tradition of culinary excellence. For generations, Mushtaq’s ancestors were renowned for their exceptional skill in preparing 53 unique meat dishes. The nickname “Shaitaan Waza” playfully emerged due to their culinary genius, which seemed almost otherworldly. This legacy was passed down to Mushtaq, who learned the art of Wazwan from his father, immersing himself in its intricate techniques from a young age.

Reconnecting with His Roots
Returning to Kashmir in 1993 after completing his education, Mushtaq initially faced challenges securing a job. After a brief stint auditing his father’s accounts, he decided to embrace his family’s culinary heritage. This decision, however, led to disagreements with his father, who believed Mushtaq’s education deserved a different path. Despite a six-year estrangement, Mushtaq’s success in revolutionizing the family business eventually earned his father’s respect.

Modernizing Tradition
Mushtaq expanded the family business by incorporating catering, event planning, and wedding management. He introduced modern innovations, including buffet systems, high-end crockery, and tents, transforming traditional approaches. His team swells from 20 to over 100 during the busy Wazwan season, reflecting the demand for his services.

Bollywood and Beyond
Mushtaq’s expertise has earned him collaborations with Bollywood icons and prestigious international events. From catering on the sets of Bajrangi Bhaijaan to serving stars like Salman Khan, Deepika Padukone, and Anurag Kashyap, Mushtaq’s Wazwan has captivated taste buds worldwide. His services have extended to Arab nations, London, and America, introducing Kashmir’s culinary treasures to global audiences.

Honoring Heritage and Guiding the Next Generation
Despite his global recognition, Mushtaq remains deeply rooted in his heritage. He takes pride in passing his knowledge to his son, ensuring the continuity of their family tradition. “Our work is perpetual; it demands dedication and respect,” he says.

Mushtaq’s journey has been featured in National Geographic India, and he remains a pivotal figure in promoting Kashmiri Wazwan through collaborations with JK Tourism and prestigious hotels.

A Lesson in Pride and Perseverance
Mushtaq emphasizes the importance of valuing one’s work. “In Kashmir, people abandon their heritage due to dissatisfaction, while outsiders step in to fill the gap. The pride in our craft should never waver, regardless of recognition.”
